The Set Cost Variance screen lets you quickly and easily set the cost variance for all of the items in a particular inventory level or item range.
Whatever global cost variances are set here can be overridden for individual items in the Receiving Cost Variance field of the Restaurant Inventory Items screen.
You can limit the items affected by an item number range, inventory levels, and/or entity and store groups. Leave filtering fields blank to include all.
The following options are available:
Inventory Item Range Filter by item number range, or leave blank for all.
Inventory Levels Filter by inventory level, or leave blank for all.
Entity Selection Filter by entity # or store group, or leave blank for all.
Cost Variance Enter the percentage change (up or down) that will trigger a warning when any item included here is received on the AP Invoices and Manual Checks screen with a variance in purchase price from its previous purchase price of more than this percent.
Price Setting Use this drop-down list to either lock or unlock the prices of the selected items. You can also retain the current setting of the items (from their Restaurant Inventory Items screens).
Note: If an item has its price locked on its Restaurant Inventory Item screen, price changes outside the defined variance will not be allowed, but changes within the variance will be allowed. Thus, you can force all price changes to within a certain variance by both locking the price and setting the cost variance.
